I am a bonafide salad fanatic.
I have no explanation for why or how this happened.
I do have one significant requirement - no creamy dressings. Ranch is sacrilege. Creamy Italian is dishonorable. And don't even get me started on Thousand Island.

I'm a big fan of the chopped salad. I do not appreciate bulky lettuces. A memo to the people - head lettuce is best lettuce. It is cheaper. It is healthier. It lives longer in the crisper.

For this, I used a mix of red Romaine and plain ol' fool Romaine. Diced smallish.

I grabbed the early birds from the garden, which included a couple of black cherry tomatoes that embody a very disconcerting bruised hue, but are tasty, all the same.

I also used green beans from the garden, snapped and blanched.
To round it all out, we had diced cukes and zukes from the garden, along with chopped artichoke hearts, canellini beans, pine nuts and fresh-shredded sharp cheddar. Oh, and garden beets! I forgot them until after the photo was taken, just as I sat down to dive in.

The dressing was my fave dijon balsamic vinaigrette, found
here. I will never love another more. But it's true what they say - buy the good vinegar. It matters.

Yo, if this is bird food, pass the wings and bunk me in a nest.
Nothing better than a really good salad, especially in summer. This coming from a life long, never eaten anything that had a face, vegetarian.

Practically everyday I eat a spinach salad with onions (any kind), cucumbers, tomatoes, fresh chopped basil, sunflower and pumpkin seeds, cranberries, a little sea salt, pepper, olive oil and a splash of balsamic vinegar. I despise creamy dressings!! Then I crumble goat cheese on top. Yummmmmm!!! I know what I am having for lunch today. LOL
ReplyDeleteThis looks so great. I love a chopped salad too and prefer a vinaigrette over a creamy dressing most days. My only "creamy" weakness lately is a wedge salad with fresh tomatoes, blue cheese, and ranch. But...98% of the time I am making my own oil and vinegar concoction. Good vinegar does make a difference!
ReplyDeleteMmmm yum! My favorite salad in the whole wide world is romaine with mozarella, sliced almonds, chopped cukes and dried cranberries with Annie's All-Natural Raspberry Vinaigrette. Yuh-uh-mee!

ReplyDeleteI LOVE SALAD! and my fave thing to add are walnuts, I chop up walnuts and any nuts really, I am just a nut! Your going to cringe, but I love ranch dressing, gotta be a good organic one though from the fridge section.

Oh you know what else ticks me off? the shredded lettuce people feel compelled to put into sandwiches when you order out. It's ICEBURG and it tastes like BEETS! I mean...BLEACH!

ReplyDeleteLooks fantastic. I too love "chopped" salads. I really don't like huge pieces of vegetables that I can't seem to fit into my mouth without it being messy or awkward! I finally have some beans and small tomatoes, fresh from my garden.... I'm trying this one tonight!
